The trio met each other while working in the Melbourne restaurant scene back in 1986. Dave Evans and Daniel were both chefs and Dave Corsi was the front of house manager. After two years of working together and becoming best mates, they teamed up to open their first venue, The Lager Bar in Fitzroy Street, St Kilda and the rest is history.
