The atmosphere should be laid-back and casual, with music and noise and chatter all around. You might find emphasis on a wide range of handcrafted beer from small and local breweries. Then you add a superb kitchen turning out the most unexpectedly high quality food. Unexpected for the setting, but totally what the increasingly mature palates of the public demands. The food might be creative high end “pub grub” – greasy, tasty and fun sharing. Or – it might be fine dining quality that you might expect to find in a more formal restaurant.
