For generations, the Murphy family has farmed the land at Coolhull, Co. Wexford. Tomás Murphy began making ice cream on his family dairy farm in south Wexford in 1990 under the Paganini brand. Almost 30 years later, the nutrient-rich milk from the family farm is still the core ingredient for the ice cream, cheesecakes, as well as the fillings and finishes for its baked desserts. The company produces its own cream cheese and cheesecakes in its dairy and bakes its biscuits to provide the golden cheesecake crumb, which, it says, makes its cheesecakes unique in taste and texture.
