People especially villagers would sit around set up tents and lit touches in the nights warming themselves by the burning olive wood and sitting around campfires. al Hakoora the untold story It all commenced in 1 9 7 3 when my father Rimon Boulos, then a very young man, took upon himself the task of transforming the Hakoora of his house into a Hamble restaurant by providing a few wooden tables, chairs and a small kitchenette to serve the people of his village Beit Sahour, annexed to the holy city of Behtlehem the cradle of Jesus Christ, with different types of Arabic food to suit the needs of the incomers. By the passage of years and the increasing number of visitors, this Hamble restaurant had been turned into a larger place and modernized to coincide with rising demands of the area and there emerged the concept of elevating the restructuring of the restaurant in an appropriate architectural manner to match the progress of life.
